Brown Sugar Boiled Icing

Ingredients:

Yield: 4 servings

  • 1 1/2 cup brown sugar
  • 1/3 cup water
  • 2 egg whites (make sure no part of yolk is in it)
  • 1/8 tsp salt
  • 1 tsp vanilla (or a little more)

Preparation:

Boil together sugar and water until soft ball forms when tested in small amount of cold water. Beat egg whites stiff and gradually add syrup in a steady stream beating constantly, until frosting holds shape. Add salt and vanilla.

Story:

My Mom used to make this for chocolate cake and us kids could hardly wait 'til supper was over and we could all have a nice big piece. Yummmm!
