Why drink it? Direct from the Golden Mile Bench, hand-picked from older vines, much attention was given to the production of this chard so the result would be nicely balanced. A gentle creaminess emerges on the nose, hinting at the French oak treatment and full malolactic fermentation, along with white peaches and fresh lemons. The creaminess turns to a buttered toast element on the palate and some spice notes are present, but not overwhelming, with some minerality on the finish. This bottle should not be at all intimidating for anyone starting to explore chardonnay.
Pair with: Slightly savoury Ginger shortbread cookies made with lots of butter, or a softer version of ginger snaps. Sole, salmon, or halibut with lemon slices and a side of creamy mushroom risotto. Give polenta a try on the side of a sage-flavoured baked chicken.
