Keep your fingers and toes crossed that travel will resume soon.

If online chatter and a handful of hospitality industry reports are any indication, one of the prevailing trends could be folks seeking smaller, relaxing, outdoor spaces to explore this year, and probably next year.

Easing back into vacation planning? Did you spend time during the pandemic pondering the importance of local products? Turning your table into a more organic – literally and figuratively – experience?

Enter the revised and refreshed Tree to Me Inn, opening soon in Keremeos.

You’ve probably driven right past the property if you’ve taken the Highway 3A to and from Vancouver, and maybe wondered what it’s all about.

The farm-stay option, which is under new management, has a rustic and refined charm, with a market shop and bistro in the works.

In other words, you can park yourself in one of six rooms, complete with a kitchenette, head downstairs to purchase local B.C. products to turn into your own creation, or hit the bistro for a plentiful plate of organic dishes.

Chef Brock Windsor made a name for himself at Vancouver’s Listel Hotel, Vancouver Island’s Sooke Harbour House, and Cowichan’s Stone Soup Inn, among other culinary locales.

He’s sure to make a name for himself here with a planned signature brunch dish: the “souffle pancake.”

Leanne Pawluk and John Schmidt are general manager and retail operations manager, respectively.

Leanne’s history in hospitality began in Banff. Her family owned and operated the Rimrock Resort Hotel for more than three decades, though she has had an eclectic career in communications and tech.

She has written speeches delivered at the White House. Perhaps there’s a story there she can share over a chat on Tree to Me’s patio.

John is deeply engaged in stocking the market fridges and displays, sourcing items that you never knew you needed to have in your pantry, bringing his more than 25 years of experience sourcing organic and natural products to new levels.

You may recognize him from the aisles of Choices or Nature’s Fare — and his byline on beer reviews.

The craft beer aficionado is upping his knowledge with beer master cicerone courses. What’s that? A cicerone is the beer equivalent to a wine sommelier.

Chef Brock is thoughtfully working on products made from ingredients sourced just a handful of steps away from the kitchen.

All three have had their hands in the dirt at this working organic farm, which, rumour has it, grew the best asparagus in the area this spring.

Tree to Me is a work in progress, but you can sign up for their e-newsletter at https://www.treetomeinn.com/ so you know when that souffle pancake is ready for a brunch date.

Opening is expected in mid to late June.
