Boil water?

What does boiling water actually do in a boil water notice? I have seen people boil water and wonder what they think that they are doing.

From high school I understand that boiling water evaporates (some) things from the water as well as making the water hot. But look inside your kettle or hot water tank after a year and you will find things such as minerals and dissolved solids on the lining.

Doesn't it make more sense to distill the water and that way it removes the minerals and contaminants in a much more efficient way. It is just a thought as I am no scientist.

Could someone else clear this topic for me please. By the way Brita now makes a mineral filter that lasts six months for your Brita water filter.
