Ever since I started as a cook 21 years ago I have been an avid mushroom hunter. BC has an amazing array of edible mushrooms and I take advantage of them every fall.
Last weekend Kristin and I went to pick lobster mushrooms 20 km from Revelstoke. We left on Saturday morning and drove 3 hours or so, parked the car and entered the forest with back packs and bags at hand. We saw waterfalls, we enjoyed the bird calls and came out of the forest with a great afternoon of memories and bags filled with 9 pounds of lobster mushrooms! We were also very lucky to find a huge patch of Coral Hedgehog (Hericium Coralloides), a nice if weird looking coral like white mushroom that is extremely tasty. Ultimately for me this was a very relaxing way to spend quality time with my wife while feeding into my addiction for mushrooms.
We slept in the tent that attaches to our Aztec at a cozy campground outside Sicamous on Saturday night. For dinner that night as an appetizer we had fresh organic yellow tomatoes from our garden with buffalo bocconcini from Valoroso Foods. For the main course we had sautéed prawns with fresh lobster mushrooms in tarragon butter, served with some homemade foccacia. For dessert we had s’mores over the campfire, of course.
In the morning we had an omelette with lobster mushrooms and gruyere cheese, and some toasted foccacia. We were in heaven. Packing up our Aztec tent is easy, so we headed out quickly to enjoy a picnic lunch and a bit of paddling in the canoe before getting home. Our picnic of “leftovers” (garden veggies, cheese and crackers and a bit of fruit) was just right after our afternoon of watching loons and painted turtles. We even had time to make a small detour off the main road and buy some organic Yugoslavian garlic from a fellow whose farm was for sale! (That sure looked like a lot of work!)
We both had a great time and came back refreshed and ready to tackle the world-at-large again. We will also have many great meals full of mushrooms at home for the next few years.
