Baked Halibut

Ingredients:

  • 6 Halibut Fillets
  • 1/2 cup real mayonaisse
  • 1 tbsp Dijon mustard
  • 1/4 tsp fresh minced garlic
  • 1 tbsp fresh squeezed lemon juice
  • 100g bag of kettle cooked plain chips
  • 1 cup panko crumbs

 

Preparation:

Wash and pat dry your fish. Combine the mayo, dijon, garlic and lemon juice. Rub onto the top of each fillet. Mix together the chips and panko crumbs and pat onto the mayo mixture on the fish. Bake in 350 degree oven until cooked through - approx. 15 to 20 minutes (until fish flakes).

 

Story:

This recipe was adapted from the Fish House in Vancouver, BC, and then re-printed in a local newspaper. You can make it your own by adding fresh local herbs to your mayo mixture. I have even used the salt & pepper chips with my crumbs. It is a family favorite now and our go-to fish dish when we all crave "fish and chips". You get the flavor without the fat. I have even used this on wild Salmon fillets.
