Chinese Appetite Soup

Ingredients:

  • 1 carton or can of chicken or vegetable broth
  • 2 thin slices of fresh ginger root, minced
  • 1 small clove of fresh garlic, minced finely
  • Handful of colorful veggies on hand - I use: a mushroom, thinly sliced carrots and celery, cabbage or Bokchoy (optional)
  • Dash of Chinese 5-spice
  • 2 drops of sesame oil

    Preparation:

    Warm oil, add ginger, garlic and 5-spice. Pour in broth. Add vegetables and cook on medium high heat for about 10 minutes.

    Story:

    I am not of Chinese origin and I don't have a very good appetite either, so why the name? This soup gets me eating after a bout of illness where tummy upset or lack of appetite prevent you from having a good appetite. The ginger and Chinese 5-spice are lightly used, but absolutely crucial. Happy eating, my K-towner folks!
