Why drink it? From the winery’s Simes Vineyard – unique as it is north-facing and lacks direct sunlight – this organic Pinot Gris comes from the grapes picked last to create a bottle of Gris. Produced in a combo of stainless steel, concrete, and oak, the wine is lively from start to finish. Aromas of lemon zest, tart apples, and the scent of quick summer rain hitting warm asphalt, the citrus notes brighten on the palate with further lemony acidity, mixed with light oak and a hint of creaminess that emerges on the finish. Super dry but yet fresh and balanced.
Pair with: Shellfish, crab cakes, grilled fish dishes. Does very well with takeout fish and chips with fresh lemon juice and a side of coleslaw in a vinaigrette dressing, with an addition of sliced Granny Smith apples as a garnish. Veggie-based risotto is worth a try.
