Chicken Paprikash

Ingredients:

  • 2 teaspoons vegetable oil
  • 1 yellow onion, finely chopped
  • 1 tablespoon paprika
  • 1 tablespoon poultry seasoning
  • 1 sliced green pepper
  • 1 can mushroom pieces
  • 4 boneless, skinless chicken breasts (or cut up a whole chicken)
  • 1/2 cup fat-free, low sodium chicken broth or add just enough water to cover the chicken
  • Salt and pepper to taste

Preparation:

In a large skillet, saute onions and green peppers over medium-high, until softened. Sprinkle paprika and poultry seasoning over onion and stir. Add chicken and cook 5 minutes each side, until no longer pink. Add chicken broth and mushrooms. Reduce heat, cover and simmer for at least an hour. (I usually let it simmer for a couple of hours.)

Serve over noodles or rice, and have some sour cream for added flavor.

I learned this recipe from my first husband, who was an excellent cook. It is one of my family's favorites. Hope you enjoy it, too.
