Easy Cranberry Chicken

Ingredients:

 

  • 1 can cranberry sauce (or equivalent measure of homemade)
  • 1/4 cup of soy sauce
  • 2 tbsp fresh lemon juice
  • 1 tsp fresh minced ginger
  • 1 tsp mustard powder
  • 1 - 2 cloves minced garlic
  • 1/3 cup brown sugar

 

Preparation:


Use skinless chicken, can mix breast, thighs and legs, or use just thighs etc. Brown chicken in a little bit of olive oil in a dutch oven. Mix together cranberry sauce and herbs etc. Pour over chicken and bake in the oven for approximately 45 minutes until fully cooked through.

 

Story:

This is just an easy go to recipe for the busy family. We serve it with mashed potato and steamed veggie. Kids love it because it has that sweet and savory mix to it.
