Stag's Hollow Dolcetto

Why drink it? Dolcetto is an Italian grape and the name means “little sweet one”, but that’s not at all an indication that the wine is sweet. Typically both dry and fruit forward, this bottle can rest for two or three more years. When you do open it, swirl and admire the indigo colour, then enjoy a deep sniff of plums, dark cherries, and a bit of sage and leather. Refined oak treatment and a mere five percent of Tempranillo both add personality to the earthy flavours mixed with notes of black licorice and chai spices. Light tannins round it out, making this a good wine for a cool spring evening.

Pair with: Pasta with tomato sauces, a meat-based ragu or Bolognese will do nicely over your noodle of choice, or pizza with a nice marinara base. Roasted chicken, or a mix of roasted root
