Kelowna chefs Mark Filatow and Rob Walker will compete Thursday at the provincial Gold Medal Plates competition in Victoria.
Filatow, of Waterfront Restaurant & Wine Bar, and Walker, of Big White Ski Resort, hope to represent B.C. at the Canadian Culinary Championships, Feb. 3-4 in Kelowna.
They'll be among 10 chefs from across the province, including:
- Jefferson Alvarez – Cacao, Vancouver
- Ned Bell – Ocean Wise, Vancouver
- Sam Chalmers – North 48, Victoria
- Sergio Hernandez – Nourish Kitchen & Cafe, Victoria
- Jesse McCleery – Pilgrimme, Galiano Island
- Ricardo Valverde – Ancora, Vancouver
- Nicholas Waters – Toque Catering, Victoria
- Morgan Wilson – Fairmont Empress, Victoria
Filatow has more than 20 years of experience. He graduated with honours from the Dubrulle Culinary Institute, and honed his skills at some of the most prestigious restaurants in B.C., including Tofino’s Wickaninnish Inn, Vancouver’s Bishops and Diva at the Met and Kelowna’s Fresco. He was the Gold Medal Plates Vancouver winner in 2012 and competed in Kelowna at the Canadian Culinary Championships the following February.
“There is strong competition, and I hope to showcase my best and have the opportunity to represent Kelowna and British Columbia at the Canadian Culinary Championships in February,” he said.
Big White's Walker is B.C. born and raised. He trained most of his career in the Okanagan and graduated from the culinary arts program at Okanagan University College in 2001. He's worked under chefs from Culinary Team Canada and Culinary Team BC. He has also served as executive chef for Bonfire Restaurant & Bar at the Cove Lakeside Resort, Mica Restaurant at Spirit Ridge, and Liquidity Bistro.
“Food should be fun and inviting; it should showcase the ingredients in a creative and memorable way, and I hope to show this in Victoria this week,” he said.
Proceeds from Gold Medal Plates benefit the Canadian Olympic Foundation. Since 2004, it has generated close to $11 million for Canada's Olympic athletes.
