Vegan Chocolate Cake

Ingredients:

  • 1 1/2 C flour (I used whole wheat)
  • 1/2 C sugar (any kind)
  • 3 TBSP cocoa
  • 1 TBSP baking powder
  • 1 TSP baking soda
  • 1/2 TSP salt

Preparation:

Stir and combine all the above cake ingredients. Make well in centre and pour in:

  • 1 C warm water
  • 1/4 C apple sauce
  • 1 TBSP apple cider vinegar
  • 1 TSP vanilla

Stir until dry ingredients are moistened then beat with whisk until smooth. Bake at 300 degrees for 30 minutes if in pan, but check after 20 minutes if using small muffin pans.

FROSTING:

  • 1/2 C dark choco chips (I used Callebaut small dark choco. chunks from the Super Store).
  • 1 TBSP nut butter (I used almond butter)
  • 3 TBSP milk (I used choco almond milk)

Combine in glass bowl and micro 45 seconds.  Spread over warm cake or muffins.
