Buttermilk Pancakes

  • 2 large eggs
  • 1/4 cup melted butter
  • 1/8 cup sugar (or honey)
  • 2 cups low fat buttermilk
  • 2 cups flour
  • 1/2 tsp of Baking Soda
  • 2 1/4 tsp of Baking Powder
  • 1/2 tsp Salt


In mix master or with a whisk, whisk eggs with sugar, buttermilk and melted butter. In another bowl combine flour, baking soda, baking powder and salt. Mix dry into wet ingredients. Spoon onto heated and buttered skillet, flip when bubbles form on the pancake.


I have this recipe memorized as I make these at the very least, once a week. I suggest that you use actual buttermilk (rather than mixing milk and lemon juice). The buttermilk gives it that definite rich flavor. I make the batter the night before and have pancakes for the kids before they go to school. You can add a tsp of vanilla or cut up apple, top with fruit etc. - the options are limited by your imagination.
