Black Bean Burritos

Ingredients:

  • 1 med. yellow onion
  • 1 jalapeno pepper, chopped
  • 1 lg red pepper, diced
  • 1-114ml can diced green chilies
  • 1-398ml can refried beans
  • 1-540ml black beans, drained and rinsed
  • 1/2 cup frozen or canned corn kernels
  • 3/4 cup chunky salsa
  • 1 heaping tsp chili powder
  • 1/2 tsp ground cumin
  • salt and pepper to taste
  • 125g light cream cheese
  • 2-3 cups prepared brown rice
  • 12-12" whole wheat tortillas

    Preparation:

    In a large skillet (or wok) heat 1-2 tsp of oil over medium heat. Add onions, jalapeno and red pepper and cook for 3-4 minutes. Add black beans, green chilies, refried beans, salsa, corn and seasonings. Stir well.

    Cook for about 10 minutes. Add the cream cheese (cut into cubes first) and stir until cheese is melted and blended in well. Remove from heat.

    Heat tortillas and put a heaping tablespoon of rice and a couple scoops of burrito filling (try not to overfill). Fold sides of tortillas in and roll up from the bottom.

    Makes about 12.

    These freeze really well and make an easy lunch or snack. Microwave from frozen. Serve with sour cream and salsa if desired.
